From Bali, to India, via Vietnam and Thailand, the chef masters Asian flavours with some unique dishes: Bali chicken satay, peanut sauce - sweet soy sauce - sweet chilli sauce served with perfumed white rice, or half a fried spiny lobster on a bed of Chinese noodles with pesto.
